  • In Portugal, there are lots of quaint towns where family traditions remain strong.

  • Bread has been made the same way in this Portuguese family bakery for centuries.

  • I'm in the middle of baking bread with Donya Manuela.

  • Wait until you meet her.

  • Come on in.

  • Donya Manuela really lives to bake.

  • Her spirit is truly infectious and I soon couldn't help but join in.

  • I love the smell of yeast.

  • The combination of ingredients and dedication has made her a local legend.

  • The ingredients of this very special loaf of bread are very simple.

  • It's water, flour, salt and yeast.

  • But the secret is the water from the local mountains.

  • The water is filtered by the stone and helps my bread taste to like no one else's.

  • I could have worked for a large bakery, but I love it here because every loaf can be baked just right.

  • This old fashioned way of baking bread is very manual, quite organic, and also very sustainable.

  • Donya Manuela's husband goes out into the forest, clears it of much of the brush, and all of this gets used in the bread oven.

  • So this is what fuels the bread baking.

  • And the government is very supportive of this because brush clearing helps prevent forest fires.

  • This is the real Portugal where you can still find great joy in the simple act of sharing.

  • My record.

  • Now you can bake with Donya Manuela too, as part of a Viking World experience.

  • I'll bring out the others.

  • I hope that all the guests of Viking, will visit to my bakery, and I very much look forward to seeing you soon.
